Vietnamese Noodle Salad with Smoked Chicken


This fresh salad is a colourful feast for the eyes as well as the taste buds! Made with smoked chicken, shredded carrot, red capsicum, cucumber, fresh coriander and mint with a hint of red chilli served on a bed of Vermicelli rice noodles with Vietnamese dressing – this dish makes for a delicious easy lunch on the go!

Hint: This salad can be eaten cold but we like to give it a quick 40 seconds in the microwave to loosen and awaken the flavours.
